These tasty Christmas biscuits are a lovely festive food, and can be used for eating straight away or as a gift. But to be warned, shelling hazelnuts for this Christmas biscuit recipe is not a fast job, so you will need to set a little time aside in advance to grapple with your hoard. You could event use star-shaped cutters and hang these biscuits from the Christmas tree.

Ingredients
- 125g Butter
- 150g Golden caster sugar
- 150g Plain flour
- 75g Shelled hazelnuts
- 1 Egg yolk
Methods
Step 1
In a large bowl, cream the butter and the sugar together until pale and fluffy.
Step 2
Blitz the hazelnuts to a fine powder in a food processor and add to the bowl, together with the rest of the ingredients. Use a little water to bring the mixture together.
Step 3
Knead lightly, form into a ball, wrap and refrigerate for at least an hour. Pre-heat the oven to 180ºC (gas mark 4).
Step 4
Roll out half the mixture at a time, keeping the other half refrigerated.
Step 5
On a lightly floured surface, roll out to 5mm thick, cut out shapes and transfer them to a baking sheet lined with baking parchment.
Step 6
Bake for about 15 minutes, until light brown. Cool on a wire rack.
